Notes: The San Gervasio vineyard extends over an area of 2,5 hectares in the commune of Teglio at 750 meters. After four years of experimentation, we decided to grow grapes that are suitable for partial drying (drying in Italian) in this high-altitude vineyard featuring peculiar characteristics. The resulting wine is Sforzato Ronco del Picchio, whose name refers to a small wooded area behind the vineyard that was studied during the first research phase, always in the hamlet of Carterìa. 100% Nebbiolo (Chiavennasca). The vineyard is situated at 700 m asl, south exposure in the municipality of Teglio, San Gervasio vineyard. The soil is sandy (70%), silty (20%) with an acid pH. The grapes are picked in the first week of October. They are left in small boxes and arranged in an airy room (fruttaio) until mid-December (appassimento). Alcoholic fermentation in stainless steel tank for 20 days with maceration of 10 days. Malolactic fermentation and aging for 24 months in 30 Hl oak cask.
