NOTES: Francois, like many passionate Burgundian producers, emphasizes the quality of the Beaune appellation, particularly esteemed sites such as Clos de Mouches, Les Montrevenots, and the 1er Cru Champs Pimont. The vineyard's east-facing exposition, with parts facing south, combined with a mix of clay and limestone soils and 50-year-old vines, contributes to the wine's unique character. Francois uses punch downs during fermentation to enhance extraction, resulting in a wine with a distinctive "crunchiness" to its fruit. One punch down is performed to leverage the positive structural energy and achieve a nice response from the Place. This wine features crunchy dark fruits, nice structure, elegance, completeness, finesse, and always a nice acidity.
