VINEYARD: Fruit off of Roccolo Grassi's 12 hectare vineyard (Valpolicella Superiore is made from grapes grown in a 8 hectare area, while older vines grown in the remaining 4 hectares are designated for the production of Amarone and Recioto)
SOIL: Volcanic, basaltic
VINIFICATION AND AGING: Roccolo Grassi Valpolicella Superiore is made from a combination of fresh grapes and slightly dried grapes in equal percentage. The slight dehydration of the grapes lasts approximately 20 days in order to alter the skin/pulp ratio. This is followed by a 20-month aging in wood before bottling.
